Effect of pH on Polyphenol Oxidase from Nicotiana tabacum L. leaves

Abstract
Abstract : We investigated the effect of pH on the polyphenol oxidase (PPO) activity in the cell wall, plastid, mitochondrial and soluble fractions of the leaves from Nicotiana tabacum L. PPO-catalized oxidation of tert-buthylcatechol were performed in the pH range 3-9. The optimal pH of PPO in the cell wall and mitochondrial fraction are 5.0 and 6.5 respectively, the optimal pH of PPO in both plastid and soluble fractions are 7.0.
